This position is responsible for managing food service operations within the organization and ensuring that all programs and procedures meet business, federal, and state requirements. We are looking for an open minded, business focused culinary leader who is motivated, collaborative, entrepreneurial, professional, and passionate about helping others use food to Fuel their bodies.
PRIMARY DUTIES AND RESPONSIBILITIES
Oversee the day to day operations of the AP Culinary Operation
Develop and execute strategies for performance nutrition food service to all verticals of the business as well as seek outside business opportunities
Manage and evolve (as needed) systems around pricing, operations, ordering, waste reduction, etc.
Manage and maintain budget and P&L
Manage the food purchasing process to ensure best pricing, quality and delivery
Ensure food storage process is maintained to the highest levels sanitation and related procedures
Maintain required records including food production, inventory, income/expenses, meal counts and personnel records
Provide food service employee with leadership and direction on day-to-day tasks.
Ensure safety standards are maintained while food is prepped and cooked
Partner with nutrition team to create dynamic and delicious menus
Respond to customer preferences and comments
Determine proper pricing of food menu items to ensure budget goals are achieved
Plan and budget for future meals
Purchase and maintain equipment, including refrigerators, stoves and microwaves
Ensure athlete and customer satisfaction on all aspects of the meal programs
Manage and cultivate culinary internship program and develop relationships with a variety of culinary institutes
Create systems with the Performance Nutritionists so that players who need more guidance from a serving size perspective will be able to easily build their perfect plate
Work with AP staff to cater in house events as necessary
Will create breakfast, lunch and dinner menus and have kitchen that follow the 80/20 (80% of the time eat clean, often, recover and hydrate) approach to nourishing and recovering the body for optimal performance.
Will work with the performance nutrition team on healthy snack options for each body composition category
Design weekly menus to increase variety and to drive excitement in our meals
Manage process around regular recipe analysis to make sure all meals meet healthy nutritional requirements
Partner closely with the performance nutritionists to provides nutritious meals to those athletes that have food allergies and/or sensitivities
Other duties & responsibilities
Culinary operations manager will:
ServSafe certified and obtain any other certification as deemed necessary by the state, city or county
Ensure the kitchen and/or other food service operations are in optimal functioning order by working with the appropriate Athletes Performance staff
Create an appropriate flow in the kitchen to help support best choices of the athletes
Be responsible for the cleanliness and organization of the kitchen
KNOWLEDGE AND SKILLS REQUIREMENTS
Bachelor?s degree in culinary nutrition, culinary arts or similar
Minimum of 5 years? experience managing and growing food service operations
RD preferred, but not required
ServSafe Certification a must
Demonstrated ability in excellent customer service skills
Self-motivation and ability to work independently
Strong business acumen
Experience managing P&L?s
Minimum of 5 years? experience in a people manager role
Ability to be creative with healthy menus
Excellent time management, organizational, and record-keeping skills.
Ability to complete nutrient analysis on all menu items
Excellent PC skills (Microsoft Office Suite, Internet, etc)
Strong understanding and implementation of food service quality and safety procedures.
