Relay Foods is in the process of expanding to produce a line of healthy, delicious prepared foods and meal kits. We are seeking a reliable, experienced and entrepreneurial-minded chef to fill our Head Chef/Kitchen Manager position and lead this initiative, including launching and managing our in-house commercial kitchen in Richmond, VA.
The right candidate will have thorough knowledge of food preparation and servicing techniques suitable to a prepared foods department for a grocery store or catering service. S/he will enjoy working independently to manage production, quality and portion control, sanitation, ordering and new recipe development. Our Richmond-based commercial kitchen will be serving Relay customers in all of our markets, with significant potential for rapid growth, so flexibility and foresight are important qualities to bring to the role.
Initial duties include:
Establishing and rounding out a menu of premium prepared meals for our customers, focused on highlighting locally produced and organic products for a sophisticated, enthusiastic customer base
Prepping, cooking, packing and distributing large volumes of soups, salads, and prepared meals during overnight and early morning hours, along with some light computer work to prepare and label orders for delivery
Collaborating with other personnel to plan and develop recipes and menus, taking into account such factors as seasonal availability of ingredients and the likely number of customers
Creating and analyzing recipes to assign prices to menu items, based on food, labor, and overhead costs
Maintaining quality standards around prepared food service for excellent presentation to customers
Maintaining quality standards around sanitation making sure regulations are met
Ordering or requisitioning food and other supplies needed to ensure efficient operation
Arranging for equipment purchases and repairs
Culinary Degree and/or 4+ years of equivalent experience in a high-volume, high-quality restaurant, premium prepared foods grocery department or catering operation.
Self-motivated, flexible and analytical thinker with experience leading teams
Good proficiency with Microsoft Excel, along with ability to quickly learn new IT systems and processes
Excellent written and oral communication skills
Ability to analyze existing systems, quickly test and implement solutions, and confidently articulate the changes to leadership team
A passion for and interest in food

Compensation and benefits
The compensation for this position will be commensurate with experience. Relay Foods offers an excellent benefits plan. This will be a full-time, W2 position with competitive pay and the opportunity to earn benefits that include life/dental/health and personal time off. The position is Monday through Friday. Initially the position will be largely an overnight position beginning around midnight and finishing around 10 am. As production volume grows and we expand the team, this will likely shift more toward daytime hours while the team does the overnight production.
