Position: Performance Chef

Duties & Responsibilities
Menu planning & Recipe Analysis
Will be responsible for keeping food & overall kitchen costs within budget.
Will prepare plated lunches, Monday-Friday, for up to 12 employees.
Will prepare fresh snacks.
Will prepare lunch for regular Tuesday meetings of 12 employees, as well as any other team meeting that will take place.
Will create lunch and homemade snack menus based on Athletes? Performance 80/20 approach (80% of the time eat clean, often, recover and hydrate) to nourishing and recovering the body for optimal workplace performance.
Weekly lunch menus with 2 items to start and progressing to up to 4 different items; will be created to increase variety.
Lunches and snacks will be prepared fresh that day.
Will conduct regular recipe analysis to make sure all meals meet healthy nutritional requirements i.e. high fiber, high antioxidants, adequate vitamins and minerals, etc.
Will have a working knowledge of portion sizes, carbohydrates, proteins, fats, fruits and vegetables.
Managing of the Kitchen
Responsible for organizing time to grocery shop for items that could not be procured through delivery.
Will be ServSafe certified and obtain any other certification as deemed necessary by the state, city or county.
Will make sure the kitchen is in optimal functioning order.
Will create an appropriate flow in the kitchen.
Will be responsible for maintaining cleanliness and complying with food sanitation standards at all times.
Will work with appropriate personnel on the culinary budget (food, drinks, supplies, etc).
Will be knowledgeable of food sensitivities and allergies.
Will be responsible for dishwashing, cleaning & sanitizing countertops, floors, shelves & equipment, taking out trash, cleaning out dry & perishable storage on a daily basis.
Will be responsible for keeping food waste to an absolute minimum.
Prepare requisition for supplies and food items as needed.
Procurement & Inventory of Food and Supplies
Will be in charge of ordering food, drinks, and supplies that support the daily/weekly menu.
Will procure most food, spices, drinks, etc through Athletes? Performance?s vendors to help keep costs within budget.
Will keep inventory of all kitchen items (dry goods, perishables, cleaning supplies) in order to keep stock at appropriate level.
Will be responsible for taking & maintaining inventory on a daily and weekly basis.
Will be responsible for signing for orders and double checking they are correct.
Will make sure the necessary ingredients are available for cooking and food preparation.
Monday ? Thursday (average 20 hours/week)
Bachelor?s Degree in culinary nutrition, culinary arts or similar equivalent experience.
ServSafe Food Manager Certification required.
Excellent customer service a must.
Ability to manage and run a kitchen by oneself.
Self-motivation and the ability to work alone & as part of a team.
Ability to be creative with menus that change daily and seasonally.
Excellent time management, organizational, and administrative skills.
Ability to complete nutrient analysis using ESHA Food Processor on all menu items.
Competence in Microsoft Office.
Compliance with Health Insurance Portability and Accountability Act of 1996 (HIPAA).
Strong understanding and implementation of food service quality and safety procedures.
